Oliver and Alice De Moor are the founders of the Domaine which is located in the village of Courgis, within the renowned region of Chablis. Promoters of natural and sustainable agriculture, in 2005 the vineyards were converted to organic, with Ecocert certification. The vineyards extend over 7 hectares, mainly cultivated with white berried grapes: Chardonnay, Sauvignon Blanc and Aligoté spread on the different appellations of Chablis, Saint-Bris, Bourgogne Aligoté and Chitry. The use of chemistry is replaced by sulfur and copper preparations and natural plant extracts. Therefore, it is simplicity that summarizes their production method thanks to waiting for the grapes to fully ripen, manual harvesting and aging inpiéce of wood from twelve to sixteen months.Three simple steps that lead back to genuine production. Thanks to the genuineness and simplicity of production of Chablis, the De Moors make themselves known by bringing back a wine that has always had to satisfy great commercial needs. Among the most renowned wines of the company are the Chablis "Coteau du Rosette", "L'Humeur Du Temps", the "Bel-Air et Clardy", the "Bourgogne Chitry". Lastly, not in order of importance, the "Bourgogne Aligoté Plantation 1902" which is produced with grapes that come from vines planted in the early twentieth century.
