Don Pietro Bianco IGP dei Principi di Spadafora is made from Grillo and Catarratto grapes harvested manually between August and September, grown in Monreale, on sandy clay soils facing north-east, at an altitude of 300 meters above sea level. It ferments spontaneously from pied de cuve grapes in the absence of sulfur, in a concrete tank at a controlled temperature. Ages 3 months in concrete and 3 months in bottle.
