Don Pietro Rosso IGP dei Principi di Spadafora is obtained from Nero d'Avola, Cabernet Sauvignon and Merlot grapes harvested by hand in mid-September and grown in Monreale, on sandy clayey soils facing north-west, at an altitude of 250 meters above sea level. Ferments spontaneously from pied de cuve grapes in the absence of sulfur in a concrete tank and macerates for up to 10 days at a controlled temperature. Ages 1 year in concrete vats and 1 year in bottle.
