Rapp is a red wine voluntarily declassified, exclusively obtained from barbera grapes hand-picked mostly in Gaggero vineyard — plantation year 1970 — with 50 q. per ha average yield. Spontaneous fermentation — wild yeast only — is done in stainless steel tanks with extended maceration. Aging is mostly done — for 24-30 months at least — in old casks. In the local dialect of 19th century, Rapp means “bunch”.
